Anchor Text the best way to use it

Hi i am wanting to gain links to my site and make the links relevant and have seen many sites that do not have the keyword on their site and have been told as well as having the keywords in the image that they will also have anchor text from other sites.
Can anyone please tell me the important of anchor text and how i should use it. Is it wise to build anchort text links within your own site and what other sites should you be looking for.
I have used a few article sites to gain anchor text links but most of these are no follow which does not help me.

Yes, anchor text does matter. Anchor text on inbound links can help you with keyword rankings. However, as you've probably noticed, most inbound links to our site will be linking to your brand name. As for getting link (link-building), commenting on blogs/articles in your niche can be a great way to get backlinks. However, as you noted, many sites no follow links on their blogs/articles. I've been manually removing spammy links from crappy sites and overly used money terms for several months... how long does it take for those links to stop showing up in crawl reports?

Does Google think My main keyword is my Company name due to over use in anchor text?
OK, i have recently noticed google is adding a keyword to my titles... I have attached an image which shows the results from a google site:mywebsite search... 8 out of the 10 results on the screen shot clearly have the keyword ( - CCTV Cameras) added to the end of the title. Now a lot of those pages are support pages i.e "Help & Support", "returns" etc etc.. nothing really to do with cctv cameras. The only thing i can think of, is the most common anchor text used on backlinks to my website (according to siteexplorer) is the keyword cctv cameras... (i am currently working on removing a load of the backlinks to my site due to what i think is some kind of google penalty as the anchor text is all keywords etc...) But it seems strange if google has started to discount these backlinks, that it then uses that keyword to add to my titles - unless of course, google thinks that it is my brand name... because besides the fact that it looks ugly, it's an SEO mess. Since all the pages are comprised of images, and the only text is the navigation, I'm getting duplicate content issues. I tried adding a little paragraph of text on some of the pages, but this thing needs a total revamp. My main question is this: is that menu being repeated on all the pages really a good thing? What good is it to, say, on the fire patches page, to have a menu that includes all these keywords for sports patches? Would it be better to just have a main gallery page that lists the main patch types: applique, motorcycle, Scouting, ect, and then once you get to that page, list all the different sub categories?0
