Why do I hear that it can be a bad thing to have too many content pages?

My site has lots of long tail opportunity and so intention is to produce as much content as possible to target these keywords effectively.
However, over the last 6 months I have come across numerous sources suggesting that Google can/does look down on a site having too many content pages. Is there any truth in this? Thanks.

Excellent answer by Gil. Thanks for the great post. The purpose behind the search engines' very own existence is to provide and present the visitors with, the most relevant and comprehensive information about the search term and as long as your pages provide this to the visitors, they will rank high in the search engine results pages and can possibly withstand the future algorithm changes.

If all of the pages are very valuable and serve the user you should be OK. But if Google finds too many people clicked a search result to your page, and then quickly bounced back to Google and clicked a different result from the search listings, they'll trust your site less and lower your rankings across the board.
The problem isn't too many pages, it's too many pages that aren't satisfying enough of Google's users.
In February 2011 Google launched "Panda" whose main intent was to find sites that were creating many low quality pages. Since then, the "content farm" strategy of quickly creating many pages has generally been backfiring.
Instead focus on pages that will satisfy Google's users, and preferably also attract social shares and links.

Ratings pages are Duplicate Content
This brought up another question. should the review page (which now has a canonical to the item page) be Index,follow? My item review pages are showing up with Duplicate Content errors in MOZ. Should extra content be added to item page or resource center?
We run an ecommerce company which sells machines. After the machine is used for X amount of time, we suggest changing the blades in the machines. We have a resource center for customer convenience. We are creating videos and content on how to change the blades in each machine. (each machine is a different process). Do we create videos and content in the resource center and link to the product page or do we beef up our content on the product page by adding that information there? 1 part of us thinks - "The new blade-changing content" is valuable to that product so buyers know the process before buying and hopefully gain some rank juice on the item pages. The other part of us thinks - Keep all resources in the resource center and link to learning resources from the product pages. This version doesn't beef up our product pages but seems to be the logical place to hose the content on the website. Thoughts? Suggestions?

Duplicate page content
Hi Crawl errors is showing 2 pages of duplicate content for my clients WordPress site: /news/ & /category/featured/ Yoast is installed so how best to resolve this ? i see that both pages are canonicalised to themselves so presume just need to change the canonical tag on /category/featured/ to reference /news/ ?(since news is the page with higher authority and the main page for showing this info) or is there other way in Yoast or WP to deal with this & prevent from happening again ? To Many Links On Page
I'm having a problem on a crawl warning for our main site. The warning is that every one of my pages has to many links, a little over 1,000 on almost all of them. I think this is because our category list on our left hand sidebar has so many categories, and that sidebar appears on every last one of our pages even all the way into our products. Duplicate Page Content Question
This article was published on fastcompany.com on March 19th. http://www.fastcompany.com/magazine/164/designing-facebook It did not receive much traffic, so it was re-posted on Co.Design today (March 27th) where it has received significantly more traffic. http://www.fastcodesign.com/1669366/facebook-agrees-the-secret-to-its-future-success-is-design My question is if google will dock us for reprinting/reusing content on another site (even if it is a sister site within the same company). If they do frown on that, is there a proper way to attribute the content to the source material/site (fastcompany.com)?

Results in the On-Page
