301s Creating Soft 404s in GWT

Hi,
We re-did a section of a site and got rid of hundreds of pages of no longer relevant content. We 301'd the urls to the category homepage. Now, GWT calls these soft 404s.
a) Should we have done something differently instead of 301ing?
b) Are these hundreds of soft 404 errors a big problem or threat to how Google sees us for SEO?
c) Should we correct this in some way?

Do I need to do 301s in this situation?
We have an e-commerce site built on Magento 2. We launched a few months ago, and had about 2K categories. The categories got indexed in Google for the most part. Shortly after launch, we decided to go with SLI for search and navigation because the native search/navigation was too slow given our database. The navigation pages are now hosted navigation pages; meaning, the URLs have changed and they are now hosted by SLI. I have done 301s for the most popular categories, but I didn't do 301s for all categories as we have to go through each category one-by-one and map it to the correct navigation page. Our new category sitemap only lists the new SLI category URLs. Will the fact that we have not 301'd all of our former categories hurt us as far as SEO? Do I have to do 301 redirects for all former category pages?

No international targeting option showing in GWT?
Hi for some strange reason for one of our sites the international targeting option to select what country to target in GWT is not showing. Usually it shows up like this: http://s9.postimg.org/bkxkkrafi/screenshot_1672.jpg (this is a different site we have in GWT). But it shows up like this: http://s16.postimg.org/im1ysd5z8/screenshot_1673.jpg With no way to change country targeting. My permission level is set as: Owner and are verified. Any ideas on why its not showing up? Cheers, Chris

Update content or create a new page for a year related blog post?
I have a page called 'video statistics 2013' which ranks really well for video stat searches and drives in a lot of traffic to the site. Am I best to just change the title etc to 2014 and update the content, or create a totally new page? The page has 2013 in the URL as well which may be a problem for just updating?

What are Soft 404's and are they a problem
Hi, I have some old pages that were coming up in google WMT as a 404. These had links into them so i thought i'd do a 301 back to either the home page or to a relevant category or page. However these are now listed in WMT as soft 404's. I'm not sure what this means and whether google is saying it doesn't like this? Any advice welcomed.

URL Parameter Handling In GWT to Treat Overindexation - how aggressive?
Hi, My client recently launched a new site and their index went from about 20K up to about 80K - which is a severe over indexation. I believe this was caused by parameter handling as some category pages now have 700 pages in the results for "site:domain.com/category1" - and apart from the top result, they are all parameters being indexed. My question is how active/aggressive should I be in blocking these parameters in Google Webmaster Tools? Currently, everything is set to 'let googlebot decide'.

How could I create this? Would it be a chrome extension?
I do a lot of checking for duplicate content on sites. I use chrome and generally I highlight a phrase, do right click and then "Search Google for...". However, I would like to have a quick shortcut where I can search Google for a phrase that is enclosed in quotes. Is there a chrome extension for this? If not, can I build one? Thanks.

How important is it to create a subdomain?
I was just reading an article about how Hubpages claims they pulled through from Panda by dividing their content up on subdomains. I'm wondering if anyone else has had similar success? Also, Panda aside, how important do you think it is to separate different types of content out on separate subdomains?
