I have an E-Commerce site with tons of categories. These categories live on each product page for easy navigation of the site. This means that the entire site has some 500 internal links with optimized anchor text. Is this an issue and if so .....what to do.

This should not cause a problem. As soralsokal says, internal anchor text linking isn't a regular problem for over-optimisation; the only way you'd be in danger of attracting unwanted search engine attention is if you were churning out hundreds of low-quality blog posts, linking internally over and over again to commercial pages with spammy anchor text.
Google is used to seeing navigational links on ecommerce sites, the vast majority of which are "optimised". The optimisation is fine; it's for users. You wouldn't link to your wine page with any other anchor than "wine" because it tells people what the page will be about Google knows this; navigational elements like this are fine as a result.

As far as I know internal anchor text can't be 'over-optimized'. This only is the case for external sites linking to you.

What to do with high-traffic pages that are not related to e-commerce?
Hello folks! We run a webshop selling wine and spirits, which obviously serves the purpose to generate revenue. To add further value to our customers, we have a section on the site, suggesting food recipes. The main purpose of that section is to inspire and educate about how wine and foods can be combined. Rankings are getting higher on "important" keywords for our business, in terms of products and product categories. However, the recipe pages, which are less important, are getting much more organic traffic. So here comes my question: Having "less important" pages that do not convert in terms of purchases, but however do get loads of organic traffic, what could I do with these pages, in terms of SEO? Could they be used to pass link juice to other, more "important" pages, that we actually want to rank on? Thanks!

E-commerce canonicals on other sites
Hi, I have a client with a new e-commerce site which is poorly ranked. Besides his e-commerce, he offers his products in a local site which very similar to Amazon. The description and HTML structure of his products, is the same on both pages. What do you think? Should I add canonical tags to the Amazon-like site? Or do I just need to change both contents to avoid duplication?

O.S.E. vs Webmaster Tools
Webmaster tools is telling me I have a bunch of websites pointing to my website, and I have been adding links as of the last 3 weeks which WM Tools is already seeing. Open Site Explorer isn't really showing any of them? My site has gone from bottom of page 5 to page 2 in just 3 weeks so I'm happy about that but can anyone explain this to me?

HTML E-mail Preventing Link Request?
Hi there, The last couple of months we have had quite a few link request e-mails apparently not being received. Our e-mails are sent out through Mozilla Thunderbird, so not an e-mail platform. However we use a HTML template to ensure our business logo and footers are consistent and to help raise awareness of the brand. Is there any chance that some e-mails may well be blocked (e.g. by filters) because we're using HTML e-mails rather than a standard e-mail format and does anyone have any advice for ensuring e-mails get through (other than getting the right contact name if possible). Should I find a way to archive high authority product pages for an e-commerce site?
One of the sites that I work on has a high turnover of products as it sells cutting-edge technology products that quickly become outdated. For each product it is important to build a strong link profile as the competition is very high. I am therefore reluctant to remove pages once products have been discontinued (typically after 6-12 months). However, I do not want discontinued products to appear alongside the latest products as this will hinder the customer experience. Is it worth me finding a way to archive the old products, so as to maintain the links that have been built up?
